Broiled white fish over rice and vegetables


400 grams White fish fillet (basa or talapia)
1 cup Rice
2 cup Water
1/2 tsp salt
400 grams Fresh mixed vegetables
1 tsp Old bay seasoning
1/2 tsp Sazon seasoning with achiote


Bring water to a boil, then add rinced rice and salt. Simmer for 20 minutes on low heat until done
Preheat oven to broil medium high about 180c degrees
Place fish fillet in baking dish and season with old bay amd sazon, broil for 15 - 20 minutes watching it as ovens vary
Steam mixed vegetables for 15 minutes

In large saucepan, sauté garlic and add tomato paste. Moro

Pan roast your carrot, onion, celery, garlic and ginger by preheating your pan and oil to medium and letting the aromatics sit on one side for 7 to 10 minutes, or until they get some good caramelization on them. Flip/Redistribute and repeat. Alternatively, toss them all in the oil and roast in a preheated 425F oven for about 25 minutes.
