Carne Asada Marinade

Ingredients

1.5 pounds skirt or flap steak
1/4 of an onion, cut into 1/4-inch strips
1 Tablespoon minced garlic (or 1 teaspoon garlic powder, not garlic salt)
2 Tablespoons lime or lemon juice
1-1 +1/4 teaspoons kosher salt
1/2 teaspoon sugar
1/4 teaspoon black pepper
1/2-1 teaspoon cumin
1 teaspoon ground achiote (aka annatto) for color and earthiness (paprika will work in a pinch)
1/2 teaspoon chipotle powder for smoky heat
3-4 Tablespoons chopped cilantro (this is a great use for the stems)
1 Tablespoon oil

Recipe

Massage it all together well and thoroughly and let it marinate for at least 3 or 4 hours before grilling. You can wait up to 2 days if life gets in the way.
